All these recipes sound awesome! I have only had roast duck and never had goose, but might try it one day. Does it have both light and dark meat like chicken or turkey? Guess, I'm wondering what does goose taste like?

That's just the beginning of real life, Kmtpr. You'll reach a whole new dimension the first time you're run over by the duck boat and pressed down into the soft marsh mud as the cold marsh water flows over you. Nothing like the feel of an aluminum keel gliding along your nose on a brisk winter day....
