Scalding is a nice clean way. We do similar, pour a bit of water on the pig before flaming it, then scrape the hair off. It is scalding in a way. Then flame them again to get a nice brown texture. Adds flavour and looks nicer. Can do the same thing with a blow torch. This way a pig can be singed up...
