I see a lot of effort put on marinades and salad dressings, i compare cooking venison to Japanese kobe methods, they rub/massage live cattle for many hours a day to produce the finest meat on the globe; end result is upwards of $ 50.00 @ Lb, your average burger will cost $ 40.00 to $ 50.00 at a N.Y....

Use a boning knife ( somewhat like a fillet knife but the shape looks like one of those knives that a butcher has used for a hundred years and touched it up with a honing steel for ever), work it away from you with the blade slightly angled upwards, you will have to get a knack for it and it's usual...

It seems very slow around here too, i haven't been out as often as i used to for A.M. hunts (My favourite ) this season because i have a day shift steady, not so good for hunting season if you don't like aft. hunts. As the forecast is rain for friday, saturday and sunday around here with high winds ...

Processing venison

I had venison processed one time only, it wasn't pretty, they took a saw to it and then wrapped and labeled; i never wasted so much good meat to cook it. I am sure not all butchers work like that, i have had venison given to me that was boneless and wrapped properly, still not as good as i do my own...
