I find hanging by the head allows the body cavity to drain easier - but have done it both ways.

Saw one at Bass Pro last night but have never used it. Appears to be very comfortable and not all that heavy. Unfortunately, I live in OK where climbers are tough to use. :?

Tye - Did you actually make your own sausage? That's what I want to try - just don't know where to start other than the grinder. As far as cooking them goes, you can't hardly mess up a good deer sausage! My mouth is watering just thinking about it... :D
