I believe all we can use is #4,5,6. I will be using #4 in 3" if I can get them.

Just wondering if anyone has an idea of how much shrinkage in weight do you get in making summer sausage? I took in 67 pounds of venison, they added 26 pounds of pork and then all the spices etc, and I ended up with about 50 pounds of real tasty summer sausage. Is this about the right ratio?
