Nog, that's pretty amazing. I'd love to learn more about your setup. I did some smoking, but nothing so elaborate. I am dry curing some sausage right now, would love to have a cold smoking setup... need to decide how much time and money I want to put into it... Side bacon, is it? ehntr, it's salami ...

I used to smoke a pipe. I made a hobbit pipe last year, just for fun. I thought summer sausage is fermented, i.e. hung in moist place for a while... Not a simple process with temp and humidity control required and room to grow wrong bacteria (botulism).

I work in IT now, for about 20 years. Before that I worked a lot of odd jobs and lived and worked in 5-6 countries, visited about 35.

looks good to me - don't eat anything that looks septic.
Was the deer otherwise healthy looking - moving around ok and well fed? if you don't want the meat - give me a shout - I will pick it up for the dog, at least :-)

Boy this is confusing. I've seen a similar post on 4 different boards. Would it be time for the MNR to reword the tags so it's clearer for hunters? Too many people are unsure to blame it on Joe Public. Dan O. There's a very nice summary someone put together on OOD - all the deer options. Look it up...
