What kind of nocks? For plastic nocks I use a pair of pliers with a piece of rubber sheet material in the jaws to keep from boogering up the nock, give it a very slight twist as you pull and they come right out. Most depends where and what angle the arrow entered and exited, doesn't take much to block a exit wound, most the time blood fills the chest cavity before bleeding from the mouth or nose, I've shot them and they stand there for a few minutes and fell over, also blown the heart clean out and the deer...
