It looks to me if you took a hand file and made a flat surface along the top of your mount the Excal mount would fit in a little more stable versus on the rounded surface. Its been a long time since I've done any rabbit hunting. When I did it we were our own dogs high stepping into the briar thickets and kicking them up on our own. 2-3 year old clear cuts were great for this. I never got to do it in the snow.

Looks great! Might also help dampen some vibration.

That will work for you. I see the outer two bolts appear to have nylock nuts which help keeping the nuts from vibrating off. I see your center bolt is not using a nylock nut. If you have not used any I would get some loc-tite to put on the threads of that bolt and nut to help keep it from vibrating ...
