What exactly are the benefits of a stabilizer on a crossbow? I figure they help steady your aim with the little extra weight at the front, but do they take much vibration and noise out of the shot too?
Another thing... can you still mount the quiver in the same spot with the stabilizer bracket there.

Sure, are. Much the same affect as with a compound bow. Stabilizes, reduces vibration, you can really see the difference when you take it off and look through the scope seems to sway more.
Don't really know about the noise factor however.
BJ makes a great double stabilizer bracket works well.
They do however fit into the bolt holes on the bottom for the quiver bracket so no you can't have both.
