I just took this sausage out of the smoker, first chunk tasted pretty good. It's even better after it sets up for 24 hours in the fridge. Can't wait to make the fresh stuff.
It's pepperoni from Eldon's Sausage. I tried it in the smoker and it added a nice smoked flavor. I was going to make sweet and hot italian sausage but the natural hog casings I got from Bass Pro smelt rotten, even after I soaked and washed them. My favorite sausage though is summer sausage from Con Yeager Spice Co out of PA, I use their seasoning kit and add cheese and sliced jalapenos. I'll be making more soon, I have to clean out the freezer for the upcoming season.

The easiest way is to buy a kit that has everything (spices, cure, casing) you just provide the meat. Here is a link to Con Yeager Spices:

Hey guys - I have been toying with the idea of making my own - up to know I havea meat shop do it for me...love the products but they are expensive. If I was to get a set up - and do it right (read want good equiptment vice saving a few bucks...but within reason) what would you recommend? What type of gear do Ineed, and what specific brands would you recommend. I have been looking at grinders and struffers (the two key items I think I need)but there are so many out there...any insight would be great.
