I FREAKING LOVE LAKE ERIE YELLOW PERCH! We went up to Port Clinton, Oh in September and landed enough yellow perch to make 19# of fillets. Just frying up my first batch tonight and OMG they are good!

Yep. a bit of work to clean em, but they are tastey fishies.
I hunt for memories, the meat's a bonus!

I a bit lazy at times. I paid the guys at cleaning station $11.00 to do em all... My god it took an hour and a half to butterfly them. I thought that was worth $11. I took a nap after getting off the lake with a windburn and sun burn while they cleaned them all.

Lake Erie can be a little rough in a 20 mph wind.

I don't know if anyone knew this, but I freeze my fish IN water. I put the fillets into a zip lock bag and fill it with water, seal then freeze. The fish fillets stay fresher that way apparently. Something my dad taught me.
