I am celibrating Easter with a Ham and Venison Roast!

I cut the long fillet into two, the long way doubling the length.
Then I placed some smoked ham on it, and few light spices (black pepper a bit of garlic, celery salt), then I rolled it up and tied it with butcher's cord.

Five minutes seering on the stove top in oil and barbeque sauce, add a little water and into the oven for another 45 minutes.

Supper is at 6!

Happy Birthday to yah! I grew up in Northern Illinois and actually was born in Beloit, WI. Spent lots of time in WI watering holes. Aaah yes a tavern on every street corner and good beer, cheese curds and heavenly brats! I also loved the summer corn boils with a few kegs of lager. I miss Wisconsin - Great State. Enjoy....

Canada Goose was the meal for this holiday weekend. I had planned to prepare it by the " Garbage Can" cookery, however with the return of winter, I decided to go the stove oven tradition.
Very tasty just the same.

Happy B-DAY Jim, my son's birthday was on easter as well. He said the best part of his B-Day was watching the Braves win. :wink: It's hard to believe that he's 10 already.

Happy Easter! Just had a wonderful water buffalo goulash (a friend of mine breeds them, lean and tender meat) with red cabbage and parsley potatoes.
