Summer Sausage

Just wondering if anyone has an idea of how much shrinkage in weight do you get in making summer sausage? I took in 67 pounds of venison, they added 26 pounds of pork and then all the spices etc, and I ended up with about 50 pounds of real tasty summer sausage. Is this about the right ratio? :?

Sounds about right, KK.

It depends on how dry it's made, but typically with a heavy summer sausage you end up with about two thirds original weight.

I think you came out with a good amount, based on my summer sausage making experience.
