Summer Sausage
Just wondering if anyone has an idea of how much shrinkage in weight do you get in making summer sausage? I took in 67 pounds of venison, they added 26 pounds of pork and then all the spices etc, and I ended up with about 50 pounds of real tasty summer sausage. Is this about the right ratio?
Excalibur Exomax and Arctic Cat 400 auto. Life don't get much better than that.
