spring Bear
anybody out for a spring bear yet ?

I did a bear roast tonight-seared the roast in a dutch oven,added onions and sliced ginger root -a can of beer ,teriyaki sauce and onion soup mix-salt and pepper to taste,and cooked it covered in a medium oven for 3 hours,served it with mashed potatoes and gravy.....and if that doesn't get you out for a spring bear-I don't know what would....

spring bear tends to be lean-some people say a fall bear tastes better-but that is not my experiance.Mind you a fall bear [as long as it isn't on fish]is very nice table fare too-especially after pigging out on berries.I render down the fat into a hard odourless pure white lard-excellent for baking.I am told the old timers cured the side meat for bacon
