Been Eating Venison!

We ate qt of canned hind qtr. fer 2 days wid noodles n onions & french bread. Took stock of our pantry have 2 qts left & 20 lbs of ground, plus 2' hunk of backstrap cut n wrapped. Then we have both tenderloins & both backstraps & 2 front shoulders & both hind qtrs of the hog i got back in Feb. Just 15 days left til opener & i got my ladder stand all set on the road crossing so its on !

All I got left is a little bit of summer sausage I froze last fall. Ain't had a Venny Dinner since last year. Looking forward to October, and hopefully success.

I've looked at my stock too . . .I got three bags of stew left. It's definitely time to hunt.

All I need is some cooler weather.
I'd rather wear out than rust out.

Just had a pint jar of vegetable-deer soup yesterday. Down to a couple pints of soup and 8 or 10 pints of meat.
Season isn't too far off and some fresh backstraps will sure taste good. :D

Jerky and summer sausage will be a treat, too.
I need to get some casings & spices on order soon! :lol:

The last of mine got cleaned out the last few weeks, actually came in real handy... We are on short time at work and some of the guys are literally pay check to paycheck so being cut 20% really hurt them so i brought in alot of what i had left to share with those that weren't weirded out by it.

i don't have a Hunter for Hunger drop off that is even close to convenient for me so it was nice to be able to share the fruits of the hunt.

Looks like short time will be lasting a while so already making plans for heavy squirrel and rabbit hunting on top of usual deer hunting.

For those of you that have a way to donate venison please do!!!!

My freezer's kinda bare too. Got 2 packs of stew and 2 packs of ground and a couple packs of jerky. Deer season can't come soon enough. :)

I don,t know how much we got left but we are still eating it regular, mostly ground meat and had fried backstrap the other day.. but my wife knows whats in the freezer

Whoo boyhidy y'all i am thawing out the 2' plus of backstrap off the last Doe i took in Nov. Gonna have onions n rice n corn plus beans fer supper!

Opened a jar of canned deer last night and mixed it with chipotle bbq sauce for sandwiches.
Now you got me eating up all the rest of last years deer so I'll have plenty of room for fresh.
Shopped online a bit for sausage casings & wood chips for the smoker last night. Think I'll start off with just basic 2" casings & hickory smoke for the first batch of summer sausage.

Basic recipe -
5 pounds ground venison
2 tablespoons sugar-based curing mixture (such as Morton® Tender Quick®)
2 teaspoons mustard seed
2 1/2 teaspoons garlic salt
2 1/2 teaspoons ground black pepper

Mix in spices, refrigerate for 2-3 days mixing by hand a couple times a day, stuff casings, smoke for 4 hours, keep in smoker at 180ºF until internal temp hits 160ºF, remove from smoker & cool.

X2... on that!! got lotsa cajun sausage, bacon burger and loins..
gunna hava cook when my boy gets home soon to use up tha stash...

Well i opened the freezer paper & gal. ziplock bag, cha ching Bonus thar was 2 tenderloins in there also. Yup all of it went into the big frypan. Twas right tasty fer real
