Ground Deer jerky and summer sausage

Need best recipes for ground jerky made from deer and duck ,, just bought meat grinder and dehydrator gona try to make summer sausage and jerky from does that need taking out from herd to get ratio's closer .... Thanks in advance

Our local grocery sells packaged jerky spice mixes (High Mountain brand) and I usually just buy whatever sounds good at the time.
Good way to start in the jerky making because all the instructions and necessary ingredients (including cure) are in the package.

I also buy pre-mixed summer sausage seasoning with cure included in the mix.
Just got a new brand to try today. (eBay purchase - enough for 25# was less than $10 shipped)

Hi Mountain seasonings are what I use for jerky with ground meat. Their cracked pepper & garlic is THE BOMB!!! :D

I get Legg's Old Plantation sausage seasoning when I make my own sausage, use it on pork as dry-rub also. The wife got Old Plantation jerky seasoning by mistake the last time, but I haven't tried it yet.

I use Chambers Sausage Seasoning and if i cant find any Beef or Pork fat i add Bacon ends and pieces that comes in 3lb boxes.
My youngest son came in when i put a cake in the and and i ask him if he wanted to try it and he said no but when the smell hit him he asked me to fry him one up :D

I've had good luck with LEM jerky seasonings. I tweek them a little to make them a bit hotter but other than that they do the trick.

The directions call for 11 # s ground meat for a pack of seasoning do most use the full 11 pounds or use less ground meat for more spice flavor ,, meat grinder will be here on Wed ! & thanks

When I make jerky, I usually only make about 5 lbs at a time. Even at that, once you spread it out, cut it up, and put it in a dehydrator, 5 lbs takes quite a bit of time to do.

Since you haven't done it before, I'd bust it up and make a pound or two here at first. That way if you don't like the seasoning you can change. If it needs more/less, you can tweak it a little. Start out small and experiment until you get it right, then make your big batches. :wink:
