Way to go Stan. I still got a couple weeks to wait and you got 2 in the freezer already!! Nice. Are you done now or can you still get more tags?

Here's a couple. The Gumbo I found on another site but haven't had a chance to try it yet. My step dad taught me the Turkey N' Noodles recipe. You can also make it using squirrel. He'd fix it with either the squirrel or turkey and eat enough to dang near founder himself.
The breast I usually cut into strips about 1/4" thick, roll in seasoned flour and fry. The gizzard and liver gets fryed as well.
WILD TURKEY GUMBO
1 STICK OF BUTTER
3/4 CUP CELERY CHOPPED
1 ONION,CHOPPED
1 GREEN PEPPER,CHOPPED
3 CLOVES OF GARLIC,MINCED
Saute' above ingredients in large soup kettle until soft and golden
Add to pot:
2 QTS.WATER
4 BEEF BOUILLON CUBES
1/2 TO 1 TSP.CAYENNE PEPPER
1 CAN TOMATO PASTE
COOK AND DEBONE TURKEY LEGS, THIGHS, WINGS AND POLISH SAUSAGE OR SQUIRRELS INSTEAD TURKEY
1 TSP. SALT
2 BAY LEAVES
2 (10 OZ.) PKG.OKRA
BLACK PEPPER TO TASTE
Stir all together and simmer for 1 1/2 to 2 hours. Add salt and pepper to taste. Serve over rice I just add my cooked rice in the Gumbo while its simmering.
TURKEY N' NOODLES
1 Leg & Thigh from Wild a Wild Turkey
Put in a crock pot and add in 2 big cans of chicken broth (about 2 quarts or so).
Peel an onion and pitch it in the crock pot also (don't cut up, slice, etc).
Add a little poultry seasoning and course ground black pepper.
Cook the turkey until it's done (meat coming off the bone). Get it out of the crock pot and set it off to the side to cool a little so you can pull the meat off the bone. Get the onion out and throw it away (you won't need it any more).
In a seperate pan, cook some egg noodles until they're about 3/4 done.
Put the egg noodles in the chicken broth that's in the crock pot and then add the deboned turkey and stir up.
Cook for about 30 - 60 min more. Best served in a plastic Cool Whip or Barbecue bowl with losts of black pepper and corn bread. Salt to taste.
It's so good, it'll make your tongue slap your brains loose!
This recipe also works with squirrels. Same directions.
Another thing we've done is skinned the entire turkey, cut the wings off, cut the legs off where the scales start, and take all of the innerds out.
Sprinkle the bird with poultry seasoning, peel an onion and put it whole inside the cavity. Lay it breast up and cover the breast with thick-cut peppered bacon.
Put inside a cooking bag, pour some chicken broth inside the cavity of the turkey and some more in just the bag.
Seal up and bake for 3 hours at 300 degrees (or there abouts, depending on the size of the turkey).
