The boy has been wanting to go down to "Nanna's" (the mother-in-law) for a while, so the wife and boy are going down there for Thanksgiving while I stay home and dog sit. Bass Pro Shop is having a sale on their propane smokers starting tomorrow (Wednesday), so I figured I'd go over and pick one up. The charcoal smoker is good, but with a gas smoker I can control things a little better.
Figured I'd smoke up a turkey leg, thigh, and half of the breast, with all of it having a little bit of thick-cut peppered bacon on it to keep it moist. A buddy of mine sent me an email and said that he had finally gotten a delivery of some good home-made moonshine, so I called him tonight and told him that I would bring him some smoked turkey breast up when I came up this weekend to pick some of it up.
Figure between the new smoker, the turkey, the deer in the freezer, and the moonshine (and of course the wife being gone.....), It's going to be a good week/weekend Tater!

As for plucking.....
Not gonna happen. Anymore, I skin them like you do a deer. It's a whole lot "cleaner", gives you access to all of the meat, and you don't have feathers flying everywhere. Once you get the cuts started around the legs, the skin peels right off all the way down.
