My experience with grinders went into the simple rule:
If you don't need both hands to move it around IT'S NOT GOOD.
Mine weighs 65lb and grinds like there is no tomorrow.

Nobody has mentioned temperature thus far, which is so important that some grinders are capable of mounting an ice/gel pack on the grinder before the cutter to help keep everything cold. The colder the meat, the easier it is to grind. Especially when there's lots of sinew and silver skin.
Some people also make the mistake of buying new blades and using them with old plates or using the same blade with different plates. The blades and plates wear together so if you use say a coarse plate regularly and a fine plate the odd time, the blades will be worn/matched to the coarse plate and won't make proper contact with the fine plate.
It's best to have a blade for each plate for the best and quickest grinding.

I got tired of the shenanigans with the meat places and ordered a cabelas 1 hr grinder about 5 years ago. Foot pedal is helpful. Also got a meat packing set up from southern Indiana butcher supply. Whole process is a snap.
Would like to experiment with making summer sausage and the little sticks if I ever quit working so hard.

Great info Trigger, thank you. Everything I've read, just as mentioned above, said to have the meat partially frozen. Not so much frozen as very cold an'stiff'. Super thread.

I always use meat that will freeze the crap out of my hands, if not your meat gets all bined up.
