Wild geese are not oily or fatty. Domestic ducks and geese are very fatty but not wild ones. Do not pluck your geese. Slit the skin along the breast bone. Remove each breast from the bone with a sharp knife. Place two breast (one bird) in Zip Locks Freezer Bags and freeze. DO NOT PLUCK and ROAST your bird. It will be too dry and tough.

Cooking instructions: Cook this dark rich meat likeyou would any high quality dark meat. Take a breast and cut it into steaks. Season both sides of the steaks. Sear both sides and cook over very high heat quickly to prevent moisture lost. Awesome taste, juicy, tender, fast, no mess. Try it.
