Best way I can think of is in my stomach LOL. We just freeze in good vacuum freezer packs good for a year or more but they never last that long.

grind the meat, toss in your seasonings and cure, stuff in a 1/2"-3/4" meat tube, smoke to desired moisture content.



i'm turning 20-25lbs of rabbit meat (i'll probably mix it with pork) into some pepperettes next week :D
