Use to love hog hunting with dogs more than any other type of hunting. It was actually more fun to not kill the hog. We would tie them up and then let them go in a pen to feed up. It is one of those sports that you want to have the right people with you though. :)

I save the broth, then after the legs have cooled I remove the meat - a bit of a labour of love getting it off those tendons. Then I use the broth and meat and make a stew - delish! Am thinking a pressure cooker might do this really well too.

I like to cook (almost) as much as hunting. One day I started experimenting with cooking deer legs so I could make em good enough to fool a deer meat averted neighbor. I fixed them like veal shanks: braised, and simmered for several hours in wine, vegis, garlic and spices. Served with garlic mash potatoes and steamed asparagus, and washed down with a fine Chianti. Neighbors ate like them like nothing before. When asked what they were I said "wood veal." Not having heard of it before i simply said "would be veal ....if it weren't venison."
I now consider the forelegs of deer a special cut and safe them for just such occasions.

I've been tree'd a couple of time's with a 300 win mag in my hand's!!

I'm working on it. Down 31 lbs and have another 100 to go. Your neck of the woods seems to be hog heaven. I was looking at the Cold Steel Boar Speer and was hoping to pick one up at the Eastern Sports and Outdoor Show. Oh, well. Maybe Cold Steel will have a sale later this year.

Thanks for the heads up. Tree'd with a 300 win mag ... there's a good story I'd like to hear.

Having a BMW repair shop I run into a whack of tree hugging bleeding hearts. These people almost get hostile when I tell them that I hunt and when they start up it's the first time they know they stepped in it. If they continue I ask if they consume dairy products. Boy I love telling them just how cruel they are to cows! Most want me to stop before I tell them about all the crappy things that surround milk!

JT,
Not sure if you have any deer processors in PA. I f you do, then that would help you with your problem. In Georgia, where I hunt, deer processors are everywhere. When I was younger, I cleaned all the animals I killed. As I got older, lazier, and financially better off, I started using a deer processor. For 70 dollars,my processor skins, guts, cubes, grinds, and wraps all my meat. It's just not worth the time and trouble involved to do it myself.

Thanks for the heads-up, I will look into this. I thought I had to remove the gut sack before taking the deer in for processing.

I hunt a different section of Ga.
I have to gut a deer before the processors will take it. I only get charged $65.00 though.
I still process most of mine myself cause I like to do it.
