Maybe a dumb question but do they stink all of the time or is it worse certain times of year? We have seen a few on shore when we go to Canada fishing but that is as close as I have ever come to a bear.

Smelly is the nature of the beast. The usually bury large kills and let them cook for a while unless it's a sow with cubs to feed.
I used to do forestry work up north as far as Cochrane Ontario.
The bears just ignored us and we never had an issue as long as they hear you in advance.
I could smell them spring, summer and fall.
When I walked up on a steaming pile of bear scat in the fall my senses came to full alert.
The bear were close, smelly and silent, and just let us walk on by.

Wolves even stealthier. Only time I saw them was when I could walk back around a bend in the trail and more times than not one would be in the trail watching for us. Since the are a pack animal, I was never sure how many were around us. They left us alone as well.

Just to add that odour would be the strongest during mating season from both sexes.

It's the hide that stinks.
Wear one pair of vinyl gloves for skinning and a clean pair for cutting up the carcass.
The meat itself is some of the finest there is.
Sausage, roasts and burger.
If you cut steaks or chops, that's fine as long as you don't over cook.
Bear meat tends to dry out easily during the cooking process.
The meat is very lean and there is no marbling of fat.
I prefer spring bear and will have to go out of province on my next bear hunt.
