Thanks for the info and the comment about my smoker. I will be glad when I can feel well enough again to finish it. I am looking forward to trying it out. I may have to make some modifications but it is a learning curve for me. I couldn't afford to buy one and I had all the material that I have used to build it so here it is. And you know what, it was good project to help me take my mind off of my problems. I have enjoyed building it and if I need to do something.

Hey Ray:

You may want to think about placement of the smoker in your yard.
I would also suggest removing it from the pallet and setting it up on a small concrete pad or patio stones. It would allow you to bolt the smoker down and remove the side supports.
A clean area free of combustible materials would be less of a fire hazard as well.

Hey Folks,
Here are some other photos of the smoke house. I made a test smoke on Wednesday, I meant to take some photos and forgot. The finished product turned out really well with two trout and it works pretty good. The temperature held fairly well and with more practice it will be even better. They were delicious. I am going to smoke some haddock tomorrow and will take some pictures.

I had the four inch chimney pipe so I made a draft to go inside the pipe and I also made the cap. I should have took some pictures while I was making the draft and cap but I didn't. I will take the cap off and take a photo looking down inside the chimney and a picture of how I have rigged the lever to close and open the draft as needed .

Ray that is so cool. I always wanted to try and build one. Just spent 16 day's in Chile. Had one of the best meals ever cooked ouside in a clay oven. They used two barrels and it looked like bed rail for the inside to hold the tray's for cooking on. The outside was covered in clay and the firebox was on the bottom of the oven.

Yours look's great hope to see some picture of your first meal from it. Take care and enjoy each day.

Looks Great Raymond!!!!!! I bet that trout sure was good, I have never had Haddock. What kind of flavor does it have??

Mark haddock is a fish that has white flesh and flakes when it is cooked. It is a nice tasting fish rolled in flour with just pepper and salt and fried in margarine or butter. I find the flavor of smoked haddock is similar to beef jerky except it is a lot milder flavor.

Hope you had a great trip to Chile.
I am going to smoke some haddock tomorrow and will take some pictures. I am looking to smoke a rack of ribs in the near future.

The next task is to figure out where I am going to position it and have my son pour a slab of cement and anchor it on the slab. I would like to be able to do that myself but I need to have some help for some of the work.

Not sure about haddock, but walleye is good smoked.

I'm saving up trout (local lake spring trout release was a week or so ago) to do a batch in my smoker.
I figure 3-4 trout to the rack & 6 racks, so I'm only about 1/2 way there so far. :oops:

Looks good Raymond. Good to hear you where finally able to put it to use. The smoked trout sound delicious!! :)
