Sounds GOOD!!!!!
I've got some venison, red stag, and bear jerky made up. The bear takes some special care to avoid disease, but it's good. :wink:

bstout I understand about how many friends you have after you make venison jerky. I almost went and bought some plane tickets to fly down and sample some. :lol: Sure looks good. :D

I make mine on the wood heater. Learned how from a friend. I put an average toast pan on top and lay the rack on top. that leaves about 1" air space between the meat and the bottom of the pan. looks just like your's when it's done. taste bud's beware. have to beat stepboy off it.

A couple of years ago I purchsed a dehydrator from Zellers for about $30. Canadian. It has 4 trays and works really good. I've also made it in the oven the the way Bob described.
