Now that its close to the end of deer season,anyone have any good recipies to share.I have a pot luck at work next week and want to share this years harvest.Best of the season too all!!

"Pig Lickin Chilli"

It's excellent!! I made a batch with moose for deer camp in SE Ontario recently and everyone loved it.

For a large crockpot:

Ingredients

2 lbs of venison or beef (chunk, stew or steak in cubes)
2 bell peppers (green or red... remove seeds)
1 large onion
4-5 cloves garlic
1 good sized (4 ") fresh green chili with most of seeds removed (more seeds = more heat)
2-3 chipotle peppers (dried, smoked chili)
1 large can crushed tomato
1 large can diced tomato
1 large can black beans
1large can red beans
1 large can white beans
( can use any mix of canned beans)
salt
pepper
ground cumin (plenty)
red wine 1-2 cups

Preparation


Brown cubed/chunk venison or beef with salt and pepper in hot pan with oil then place in crock pot
Dice then sauté onion, bell pepper, fresh chili pepper and garlic before placing in crock pot
Place canned ingredients in crock pot (drain canned beans)
Add salt, pepper and plenty of cumin (4-5 tablespoons??)
Add finely chopped chipotle (with seeds)
Add wine

Cook for 12 hours on high setting of covered crock pot or until the chili darkens (could take longer) Sometimes I cooked another 3-4 hours on low.

Deer roast

1 roast about 3 lb.

Rub a liberal amount of
onion salt
celery salt
garlic salt
Into the meat.
Put in roasting pan, Just a little bigger than the roast. cover with bacon strips.
Add about 1 inch of Canada Dry ginger ale.
Bake covered 300 degrees 4 to 5 hours
It literally falls apart and makes its own gravy.
