STRING SERVING

FOLKS ,
I need some help. I bought a jig from Dan Miller to serve my crossbow strings , but I'm lost as to where to start . Please be patient if the subject has been explained before .
I have my old string off the bow & I,m not sure if you cu :?: :?: t off the old serving or go right over it or what - so any step by step help you can give to a rookie will be greatly appreciated.

Soup, you mentioned that you can build a jig if you had the dimensions so here goes. It's all 1" square tubing.
