OT - Southern BBQ

Post by Mike P »

As some of you may know, Grizz and I have some differing opinions as to what constitutes good BBQ.

He likes that "southern" stuff they try to pass off as BBQ.

Here is a short documentary describing "southern" BBQ.

Mike, Mike ... something that evidently didn't grow bigger in Texas was your comprehension of variations on Southern barbecue.

Toby's a good guy ... in fact, I bank-rolled him when he opened that place ... but in spite of the business name, he's really a just a fry-daddy.

Barbecue doesn't involve grease and oil.

An instructional song for your enlightenment:

I thought I saw your fingerprints all over that business plan Grizz!

And for all you Yankee's and Canadians, as the song said,

BBQ in not a verb!

I got hooked on vinegar based BBQ in Florida of all places while pig hunting. I rank it right up there with Memphis and Kansas City BBQ tastes.

But I have to stay true to my roots and still rank Texas Brisket BBQ as the King of the Land.

@#$%^#$ Texans are responsible for driving the price of my corned beef up!

Can't you guys roast goats or something just prior to March every year?

mikej [good mike]: The Arkies make sure you can bend the brisket double in the package for a sign of tenderness, and most marinade in some form of alcohol ect prior to smoking/grilling/BBQ'ing. Some even marinade the brisket in the alcohol, lol.

But most just soak their feet in the marinade with the brisket while consuming said alcohol. It adds that special "tang" that they have come to love.
