We cook a deer on the pig cooker several times a year. You need to make some cuts in the hams, loins and shoulder and stuff some bacon inside. It also helps to make your sauce as you cook the deer and leave the open pot in with the deer. It keeps some moisture in the cooker. You then baste the deer with the sauce about every 20-30 minutes or so. The sauce is a vinager based suace with peppers. catsup, mollasses and other goodies. Shoot me a PM if need a recipe .

i thoroughly resemble that redneck southern friend but i still cut my deer into steaks before i fry them. by the way take steak wrap it around half a jalepina pepper stuffed with cream cheese then wrap with bacon slice and pin with a toothpick.....put foil with some holes punched in it on charcoal grill and cook till bacon is done, lipsmackin good.
I do them on a pig roaster also. The trick is to inject them with your favorite marinade every hour while cooking. Keep them pumped full. It usually takes about 4-6 hours depending on the size of the animal.
I also will do whole hind quarters over my charcoal bbq also injecting them. Drip pan in the center and charcoal to the outsides.
