HMMM>.I was sure i would get a flood of ideas on how to cook backstrap in the oven for thanksgiving..
Thank you to the guys who did give one..
Common guys flood me with some cookin advise...
Oh and to all you Excal junkies..HAPPY THANKSGIVING..(I know its early but i cant help it,, :D

I did a nice roast a couple weeks back. Went something like this....

Heat a cast iron frying pan on med high and add some butter and bacon drippings.
Salt and pepper roast to your liking and brown on all sides in the frying pan.
Pop the whole frying pan into the oven at 350 degrees.
With about 35-40 minutes left add some cored apple wedges and sliced onions and garlic.
Cooking time will vary depending on how pink you like your meat.

Made up some chunky garlic mashed taters to go along with it also.

It was delicious. The wife and kids and I really liked it!!

This is the only way I will eat cranberries. :lol: The recipe is called CRANBROSIA, and I will guarantee it will be the hit of your Thanksgiving meal. After you try it once, making it will become a yearly tradition. MmmmGooood!! Gary

CRANBROSIA

2 c Fresh Cranberries (coarsley chopped)
1 c Sugar
1 can (15 oz) Mandarin Orange Segments
1 can (20 oz) Chunk Pineapple
2 envelopes Unflavored Gelatin
1/2 c Sour Cream
1 c Heavy Whipping Cream

Combine cranberries and sugar. Mix thoroughly to dissolve sugar.
Drain well and reserve liquid from oranges and pineapple.
Add oranges and pineapples to cranberries.
Take ¾ cup of juice from oranges and pineapples, and sprinkle gelatin
over it.
Place this juice over medium heat stirring constantly till dissolved well.
Let cool, add to fruit mixture.
Fold in sour cream.
Whip heavy cream until soft peaks form.
Fold into fruit mixture.
Turn into 13x9x2 dish. Chill well (overnight) or until firm

My favorite is the simplest one I know. I'm sure all the others are great but I don't like stuff competing with the venison flavor. This is an old beef recipe that works great with venison and is quick and simple.

Dust the roast with Fry Magic (or your favorite). Sear it in a skillet with olive oil and butter for 5 minutes on one side only.

Place the seared side up in a roasting pan and place in a 400 degree oven for 10 to 15 minutes. (You should have a meat thermometer for your doneness preference).

Take it out and let it sit for 5 minutes.

We like ours rare to med rare.
