Not sure if it will work on squirrels..but on rabbits I bake them in the oven, then take 'em out, roll them in flour, and pan fry them.

Pot Pie
Here's one recipe -
Squirrel Pot Pie
3 slices bacon, cooked and crumbled
3 squirrels, boiled and boned
2 cups frozen mixed vegetables
1 cup chopped onion
1 cup thinly sliced celery
1 cup fresh mushrooms, sliced
3 Tbsp flour
1 tsp salt
½ tsp pepper
½ tsp dried thyme
Topping:
2 cups buttermilk baking mix (like Bisquick or Jiffy)
1 cup milk
Heat oven to 400°F. Combine all filling ingredients in a mixing bowl. Spray a 9"x13" baking dish with nonstick spray. Spoon filling mixture into baking pan and set aside. In a medium mixing bowl combine topping ingredients. Spoon batter evenly over filling. Bake for 30 to 35 minutes or until crust is golden brown.

Hard to beat a plate of fried squirrel.
I used to be a squirrel hunting fanatic! Haven't gotten out as much as I would have liked the past couple of years though.
One sure fire way of getting tender squirrel is to shoot young squirrels. If you do get some that are older, you can fry them slow and that will usually take care of them unless they're ancient.
My step dad used to take all the squirrels I shot, so I kept him supplied. He would cook a crock pot full of squirrel & noodles and dang near founder himself.
Peel and onion and put it in a crock pot with 2 big cans of chicken broth and a little poultry seasoning. Put about 6 squirrels in there and cook until you can pull the meat off the bone.
Take the squirrel out and let it cool enough where you can handle it and pull the meat off the bone. Take the onion out and give it a pitch unless you want to eat it like it is.
In a separate pan boil some egg noodles until they're about 3/4 done. You can do this while you're pulling the meat off the bone.
Drain the noodles and dump them in the broth in the crock pot and add the deboned squirrel meat. Cook in the crock pot for about another hour.
It's so good it'll make your tongue slap your brains loose!
This is a good way to take care of some of those old fox squirrels you may get.

Re: tender squirrel.........
easiest way to tender squirrel is adolph's meat tenderizer. sprinkle the squirrel pieces with the adolph's tenderizer, put in a ziplock bag in refrigerator for a day or day and a half then fry, will just about fall off the bone.

Re: tender squirrel.........
This thread got me to thinking. Well I went out behind the house and shot 4 squirrels. Cleaned em up 3 of them were old so I put one squirrel each into a pint jar and covered them with turkey gravy and half a teaspoon of salt. Had a doe given to me and I'm going to start canning tonight. Don't know how this is going to turn out, but I'll let y'all know how canned squirrel is soon.

Re: tender squirrel.........
Most of the time I pressure cook the old ones for 15 minutes and then fry them. Goin to have the young one for breakfast in the morning with some gravy made from the drippings and some biscuits.
