Well, Joe, after spending almost 8 hrs with a knife in my hand yesterday I'm in no hurry to get a moose! In fact, I wouldn't even be so be thrilled about a deer this week!
Hubby has been moose hunting on and off for many yrs - this is his first. That smile will last a long time! I'm so very happy for him!

Was interesting to separate the muscle groups. When related to the deer anatomy it was probably 10x the size - just incredible!
We were pretty fussy in the initial and final cutting and clean up. Out of 1/2 the moose we ended up with about 120 lbs of pure meat. Half of that was split with another hunter (who was actually out deer hunting yesterday while we were butchering! ).

I didn't hunt moose this year, but my camp struck out this year (only the 2nd time since the early '80s). A troubling observation is that the locals are saying that nobody is seeing calves in our area.

I would absolutely feel RICH if I had that much moose meat. That is great! I will be starting on my own butchering tomorrow and will be thinking about you in terms of volume. I always feel rich when I get our venison in the freezer too. Anxious to get at it. Thanks to 'Meathunter's' cooler plans, we built our own walk-in cooler over the summer and can keep it fresh while we butcher.

I wonder if the cows lost their calves with the heat and low rain fall this year? I know that with horses sometimes heat stress will make them abort.

I think you're about right. We ended up with 1/4 of the moose. Deboned and fussy-cleaned it's about 50 lbs +/-. About what you can expect from a good sized deer. Cuts were probably the same ratio as you would with a deer. Very interesting experience!
