BuckBalls

Post by VixChix »

Here's the recipe for "Buck Balls" - it's one of my favorite ways to share venison with people who claim not to like venison. :)

I've made them with deer, moose and have sometimes added ground beef as well. I like them best when I've mixed the ingredients a few hours (or a day) before making the balls.

2 lbs ground venison
1/2 cup warm water
1 1/2 cups Stove Top stuffing (the whole box)
2 eggs
1 package onion soup mix
1/4 cup BBQ sauce
1 8 ounce can tomato sauce (or pasta sauce or more BBQ sauce)
I package sliced bacon
toothpicks

Preheat oven to 350 degrees F.

In a large bowl mix all ingredients together except bacon and tomato sauce. Shape into golf ball sized meatballs. Wrap each buckball in 1/2 strip of bacon (I skewer with toothpick) and arrange in baking dish. Pour tomato sauce over meatballs and back uncovered for one hour until nicely browned. Serve with tangy BBQ Sauce or just ketchup.

Man, I thought those Canucks save EVERY part dont they!! On a serious side my mom used to make "porcupine balls" in the pressure cooker. It was ground mt onion soup mix and rice made into balls and pressure cooked in golden mushroom soup. They were tasty, I bet these are great! will have to try.

Several years back a few of my friends went to Colorado from Georgia for their first Western hunt. One killed a decent 5X5 elk, gutted it and got it back to camp and hung up on a meat pole. That evening they were visited by a local Game Warden. He looked over the Elk and asked who had killed it. My buddy said he did. The Warden asked him where the proof of sex was. My buddy was "Say what?" the Warden explained that he had to leave the testicals attached to prove sex. My buddy said " He has antlers Sir. I done ate the balls."

They said the Warden left still laughing. No ticket was given.

Those Buck Balls do sound good, might have to try em. :D

I took "Moose Balls" to an all ladies event last week and I'm pretty sure that everything you could think of to say was said by these normally straight-laced ladies... even I was a bit surprised!

I had an acquaintance who once scavenged the "proof of sex" from a buck for supper. Interesting...

Some Canucks do save every part. I shot a buck at the back of a local farm a few years back. A guy who was living in the farm house at the time was out hunting with me. As I was field dressing it he asked if I was going to keep the "family jewels". I said I didn't want them so he cut them off. We got the deer back to the farmhouse and up so I went inside to wash up. He already had the frying pan heated up and in they went! He actually asked me again if I was sure I didn't want them before he dropped them "down the hatch"! Apparently they're best if they're still a bit "pank" in the middle.

Regular turkey stuffing - the plainest. I've used some store brand stuffing as well, when Stove Top was sold out - it all worked out good.
