If you want to try something a little different ...hi mountain pepperoni jerky seasoning. I've made it the last 3 years and it's very addictive ( I only ask that you dont tell my late grandmother that I'm using prepackaged spices) .
I've made mine with ground venison, haven't tried with sliced meat yet.
Micro 335 nightmare, Axiom
Swhacker 150 grain, zombie slayers
Wants: micro ultra lite, adj. stock, take down, good trigger, good scope , low 300 speed to keep "cockable" w/out crank

Sounds great, I have never tried ground meat, hmmm. :eusa-think:
This is based on a mix from Cabelas called Hunter's Blend, then per instructions from a good friend, instead of marinating it with the dry mix on it, you mix the spices in with pickle juice, and turn the Zip Lock bag over every 4-6 hours. 24 hours to marinate, 5 hours in the dehydrator, maybe 6 since I cut the pieces 3/16" thick!
If it comes out as good as my buddies, I'll let you all know, just don't tell anyone!

The following items make ground meat jerky a breeze. One caveat, your friends will belly laugh upon seeing the blaster. Problem is solved quickly once they taste the finished product.

Please post your recipe once you confirm its a good'un.

Here is the breakdown, and around 4 PM I'll let you know if it passes the taste test! :eusa-violin: :eusa-popcorn:

Using the Ninja Foodi, and a rack that I got from Amazon. I'll trim pieces after cooking, these are huge!

I use the required amount, and weigh the trimmed meat to 2 pounds. Dump the two mixes into a gallon size zip lock bag, dump the whole jar of pickle juice into the baggie, and mix well. Add meat, toss around real good after closing the bag, turn every 4-6 hours for 24 hours.

Load the rack up, and place in the Foodi for 5 hours at 150 F. Check, add more time depending on your preferences, and thickness of meat. I slice mine about 3/16" thick before cooking!

Don't forget to blot the meat to remove excess juices.

Looks great, tastes better. I had to cook about 60% of the batch 1.25 hours more, and will report back! This is a bit chewy, the way I like it, and after to munch on it for a few seconds, the pickle flavor comes on, and the spice just a little more the more you chew. Easy, and worth the try. This setup gives you a good yield too!
