Matt, you could open a wild game restaurant, and even possibly have your own TV show. Not only do all of the dishes look fantastic, you plate them very well indeed!
Thanks my Friend.
However I have found that if you take something you really enjoy, and try to turn it into a job of sorts, the appeal diminishes rather quickly.
So for now, I'll be content posting the odd morsel here from time to time...

Cheers,
Nog

Actually quite easy to make! A roll of Bologna, score it all around. Your favorite dry rub, make sure to coat liberally and get it into all the cuts, then smoke for a few hours @ about 200-225F. Or until it turns a nice golden color. Then baste with your favorite sauce/glaze and smoke for another hour or so, basting as needed... Slice and serve!!
Makes one heck of a sandwich!!

Don't trust me? Google it!!

Hold my beer and watch this...

Linguini with home made pasta sauce, whitetail meatballs, shredded cheddar and cheesy garlic toast:

Complimented very well by a rather fine French Merlot.
