had a co-worker give me some of last year's moose his dad shot. was very good, he told me he has several leftovers from 2003-2004 in the freezer also and would gladly give me more. question is - i'm a little skeptical about 2-3 year old moose, would it still be good enough to eat ? would it still taste good , thanks again
Check for freezer burn!!! I have kept venison upto 2 years if it is properly package. We do all our own butchering and wrapping. Even before the vaccum packaging machines we were able to work most air out of the package as we wrap with plastic wrap first then wrap with the freezer paper with plastic on one side.
I have found some frozen meat in our freezers but I near three years old, it looked good (no freezer burn) and smelled okay, but when cooked it had a strange taste. We threw it out rather than taking a chance on getting sick. Since then we do not keep meat over 2 years.

Have a follow-up to this. Had a bunch of summer sausage done in Dec-Jan., and have had it wrapped in 2 layers of butcher paper in the freezer. How long will this stuff be good for? Im on this new diet plan (
), and it DOESN'T include venison sausage right now
Paid a lot for it all to be made, advise would be great.
