Sounds interesting, and in keeping with the "extraordinary" nature of this forum.
I think the sign-up is a good idea, with a firm cut-off date, so there is little opportunity for misunderstanding or hurt feelings. The $$ limit is wise, too.

Actually, we have one of the last surviving authentic country stores in North Carolina in the community ... one that serves the locals and isn't touristy.

Got so excited thinking about the hoop cheese & soda crackers that I forgot to say the exchange sounds like a good idea.
The hoop cheese brings back memories of a restaurant I stopped at in northeast NC several years back. The had a salad bar that could have kept you fed for weeks complete with hoop cheese and a barrel of soda crackers.
