The classic Prospector in 16 is a nice boat. What style you should buy depends on what type of paddling you want to use it for (and your budget ).
I vaguely remember paddling the Prospector last year. To me it felt better as a solo canoe than as a tandem as it seemed more comfortable heeled over - it was very responsive and capable for soloing with excellent secondary stability.
Years ago (in what seems like another life to me now!) when I was looking for a fast downriver canoe that would be quiet in the water, track decent on a lake, durable for rivers, and light enough for me to carry over the longer portages I was looking at one of these in 16' 4" outfitted with thigh straps, pads, and cover:

Those are some great pictures!
We have a 14' Coleman canoe, paid pennies for it brand new. I am looking forward to seeing what people recommend for decent canoes, we want another one so the whole family can come along.
We get ours in the water a couple times a week, my son and I have taken on some pretty crazy white water on some of our overnight trips. After seeing the damage we have done to plastic that is extremely durable I would hate to see what we would do to lesser canoe.
Our goal is to find a place like photoed above to spend a few days on, a nice view with water under the canoe instead fast water and rocks.
Thanks for sharing the pictures!

Pyd - you'll notice a big difference in a 16' foot canoe from a 14'. 16 is the minimum I'd consider, even for solo. I don't think you'll find one that would fit the whole family, but an 18' would give you enough for 3 if you're packing for longer trips.
I have an older Scott Wilderness 16 in kevlar if you ever want to borrow an extra boat - not for white water through, as the kevlar is getting to be past it's prime.
I have a friend with an Old Town Discovery in 18 ( I don't see that listed length in their current catalog though) - that boat has been down all sorts of white water rivers on Ontario in high water, as well as down the S. Nahanni (NWT) It's ABS and more of a workhorse than a whitewater toy, but it's more than capable. Am much as I like kevlar for a canoe, I see the practicality of ABS - it slides over those surprise boulders much nicer.

16' and royalex matherial is in my modesty opinion the best to go alone(with your Ecal and a big bear on it), in two o three(all the family)
The Rocker of a canadian canoe makes the differents, give a look at the begining: http://www.wenonah.com/stock/WC_catalog%202010.pdf
