Sounds kinda silly but I made me some squirrel jerky one time ...left the bone in and it was some of the best jerky I ever had. No I didn't eat the bones
Wish I had me some right now

The wife took some out of the freezer the other day by mistake. I was in the mood for some gumbo so I made it with the squirrel. Let it go until the squirrel was just starting to come off the bones. They said I made it too spicy but I thought it was great like that. :)

Are those as big as the squirrels, or should I say dog sized squirrels that I saw in our nation's capital city of Ottawa, quite a few years ago? I got some pictures of these black critters that would come right up to the camera lens. That is no lie. I couldn't believe it, they were huge critters. One of their legs are bigger than the whole squirrel that we have here in Nova Scotia. You shoot our critters in Nova Scotia with a 12 or 20 gauge and all you will be finding is bits of hair and bone, . For some reason there is not many squirrels or chipmunks at all. There used to be loads of those critters but not anymore. I have never tried to eat squirrel, I am up to trying mostly anything once. I must find out if I can start shooting me some of them and try and eat them.
Thanks,
Raymond
