If I get one in the morning, I will butcher it during the same day. If I get one at night, I use 45 degrees F as a measure. If it is below the 45 I will butcher in the morning. I pack the cavity with ice.
If it is above 45 degrees F. I will butcher it the same night regaurdless of time. Works for me. :D
