Trying it won't cost you more than a few minutes and a pop can (or beer can  ).
Vix, those arent beer cans.....they are cylindrical containers of flat aluminum shim stock, scissors required. :D

-So is it because adding a shim or changing the ring height gives you more elevation range because the scope's erector flips the image. So by physically moving the scope up, you essentially get more downward scope travel? And vice versa.
-Or is it because the scope raises a bit and the bow drops down a touch? And vice versa.

Inquiring minds need to know!
b) Think of the scope being held stationary while you add shims to the bottom of the front scope ring. This will cause the front of the bow to drop thereby lowering where your arrow will impact.

This is the way that I understand how the shims and/or Burris inserts work. We would like our scope adjustments to be in the very center of their adjustment range for BOTH vertical and horizontal adjustments when we mount the scope. We would use the scope adjustments to fine tune the POI but we want to be very close before we start to use the scope adjustments. If after we mount the scope we find that it is way off then a shim or in the case of the Burris an offset pair of inserts are used to re-center our scope before we start the fine POI adjustment. The shims or inserts can be used in front, rear or both of the rings. The inserts can also be used to adjust vertical & horizontal at the same time by rotating the pair of inserts with in the rings. I believe that the Burris site has a video or instructions on the use of the inserts which come in a variety of combinations depending on how far off the scope ring mount is.

This is a picture of my WIN M70 30-06 with the Burris Signature Zee medium rings with a Fullfield II 3.5x 10x -50mm scope.
